Garden Glow Watermelon and Cucumber Salad

Watermelon and Cucumber Salad is a delicious slice of summer in a salad with all those ingredients glowing in the garden!

- 4- 5 cups fresh watermelon diced into small cubes
- 1 English cucumber peeled, seeded, and diced into small cubes
- ½ red onion thinly sliced
- ½ cup chopped fresh watercress
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint
- ½ cup roasted pistachios or toasted walnuts
- ½ cup crumbled feta
- For Vinaigrette:
- 2 tablespoons white balsamic vinegar
- 3 tablespoons extra virgin olive oil
- Zest of 1 lemon
- ½ tsp sea salt
- Fresh cracked pepper to taste
Combine watermelon, cucumber, red onion in a large mixing bowl and gently stir.
In a smaller mixing bowl, whisk together white balsamic vinegar, lemon zest, sea salt, pepper, and drizzle in extra virgin olive oil.
Drizzle vinaigrette over salad and toss. Add roasted nuts, crumbled feta, watercress, parsley, and mint and gently toss again.
