Swiss Chard with Sweet Potato and Quinoa
Swiss Chard with Sweet Potato and Quinoa
2 cups water
1 cup quinoa, rinsed
2 tablespoons avocado olive oil
1 cup finely diced cooked sweet potatoes
2 cloves garlic, chopped
1 bunch Swiss chard, about 5 or 6 leaves, trimmed and shredded
1/8 teaspoon sea salt
Fresh cracked black pepper to taste
Pinch of cayenne pepper
1/4 cup crumbled goat cheese (optional)
Bring water and quinoa to a boil. Cover and turn down to simmer for
12-15 minutes, until water is absorbed. Set aside.
Heat 1 tablespoon of avocado oil in large skillet over a medium high heat. Sauté cooked diced sweet potato until golden and season with sea salt. In another skillet, heat 1 tablespoon avocado oil and add shredded Swiss chard and stir for 1 minute. Add chopped garlic, sea salt, black pepper and cayenne and saute for additional 1-2 minutes until Swiss chard is wilted. Transfer Swiss chard to serving plate and top with roasted sweet potatoes and quinoa to serve. Add goat cheese if desired
