Plant-Based Vegan Jackfruit Tacos with Chipotle Pepper in Adobo Sauce

Plant-Based Jackfruit Tacos
Spicy Jackfruit Tacos made with young unripe jackfruit and adobo sauce.

Ingredients
- 2 cans green jackfruit in water drained, rinsed and chopped
- 2 Tbsp. avocado oil
- 1 red onion diced
- 3-4 cloves fresh garlic minced
- 1 chipotle pepper in adobo sauce
- 1 Tbsp. adobo sauce
- 1/2 cup water or veggie broth
- 1 tsp honey (optional)
- 1 lime juiced
- 1 tsp ground cumin
- 1 smoked paprika
- 1/2 tsp onion powder
- 1 Tbsp. low sodium tamari
- 1/4 tsp sea salt
Instructions
- Heat the oil in a large skillet over medium-high heat. When hot, add the onions and garlic and sauté for about 5 minutes until the onions have softened and begun to brown.
- Add the chopped jackfruit, water, chipotle pepper, adobo sauce, honey, lime juice, cumin, paprika, onion powder, tamari, sea salt, and cover. Reduce heat and let it simmer until the jackfruit softens slightly for about 5 minutes.
- Use a potato masher or forks and smash all the jackfruit up to get that shredded texture. Serve with favorite taco toppings.
