Roasted Red Cabbage Brings out Your Lucky Charms
There are more ways to enjoy cabbage than just boiled! Slice up that beautiful red or green cabbage, drizzled with olive oil, and season with salt and pepper. This is one of my favorite go-to’s for a quick dinner side vegetable for any night of the week and super delicious even if you don’t care for raw cabbage! Roasting it in the oven for 15 minutes will dramatically change the texture to a soft and lovely vegetable with a rich color that you will want to make over and over again! I love to top it with goat cheese and a dash of balsamic vinegar but you can keep it vegan by leaving off the goat cheese or substituting it with your favorite vegan cheese or nutritional yeast. This roasted red cabbage is chock full of nutrients and fiber for a better digestion experience and a gratifying taste! Roasted Red Cabbage with Goat Cheese
Ingredients
- 1/2 whole red cabbage, sliced into ¾ inch “steaks”
- 2 tbsp extra virgin olive oil
- 1 pinch sea salt
- Freshcracked pepper to taste
- 2 tbsp aged balsamic vinegar
- 1/4 cup crumbled goat cheese
- Parsley leaves for garnish
Instructions
- Preheat oven to 400◦.
- Slice red cabbage into 1/2-inch-thick slices, cut from a wholecabbage.
- Place cabbage “steaks” on a parchment lined baking sheet. Brush ormist sliced cabbage with extra virgin olive oil, season with sea salt andpepper.
- Drizzle with aged balsamic vinegar and finish with crumbled goat cheeseand garnish with parsley to serve.
