Cucumber Tea Sandwiches with Herb Goat Cheese
Herbed Goat Cheese Spread
2 garlic cloves cheese
4 ounces creamy goat cheese
2 tablespoons plain, whole milk Greek yogurt
10-15 fresh basil leaves
2 teaspoons fresh thyme, chopped
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh parsley, chopped
Pinch of sea salt and fresh cracked black pepper to taste
In a food processor, mince garlic cloves. Add remaining ingredients together and blend until desired consistency. Add salt and pepper to taste. Use as a spread on favorite cracker or bread and top with diced roasted red pepper to garnish.
We just assembled the rest of this delicious appetizer with a few fresh ingredients from the garden! Alice in Wonderland was our inspiration for this recipe! Spread the Herbed Goat Cheese on a toast point or sliced baguette and top with thinly sliced cucumbers, thinly sliced radishes, grape tomato and a calamata olive to crown this whimsical Cucumber Tea Sandwich!
