Best Frozen Summer Delight: Easy Chocolate Banana Bites!
Summer is coming and so is the warmer weather! With these warmer days, we tend to gravitate toward easy to grab on-the-go snacks as well as foods to keep us cool on those sweltering days. This recipe for Chocolate Covered Frozen Banana Bites will help keep our snacking between the navigational lines of something healthy and something sweet to enjoy each and every time. I was reminded of my favorite summer treat from Aunt Diana’s Bananas at the Taste of Chicago every summer as I sought out their booth for the best frozen chocolate bananas on a stick!
Bananas are already nature’s gift just out of their peel but when bananas are frozen, they transform into a delectable and crave-worthy treat with nutrients that keep them on point. Adding chocolate and nut butter send these into the stratosphere of one of the best summer frozen treat possible! I combined frozen banana pieces with my favorite Chocolate Fat Bomb recipe and made two great tastes taste great together! A few recognizable ingredients, a little bit of liquid monk fruit to tip into sweetness and the incomparable power of chocolate…and we have a winner folks!

Chocolate Covered Frozen Banana Bites
Ingredients
- 3-4 whole ripe bananas, cut into 1/2-inch pieces
- 1/2 cup smooth almond butter, peanut, or sunflower butter
- 1/4 cup cacao powder
- 1/4 cup coconut oil
- 10 drops NOW Foods liquid monk fruit (or stevia)
- 1 pinch Sea salt or Himalayan salt
Instructions
- Slice bananas into 1/2-inch pieces and place on parchment-line sheet pan. Place banana pieces in the freezer for 1 hour or until frozen.
- In small saucepan, combine the nut or seed butter, cacao powder and coconut oil and stir on low heat until melted and smooth. Remove from heat before adding 10 drops of liquid monk fruit and a small pinch of sea salt and stir.
- Once bananas are frozen, remove sheet pan from freezer. Spoon melted chocolate mixture onto the top side of each frozen banana piece. Then, drop each banana bite into melted chocolate mixture and coat the remaining banana. Let chocolate drip off banana before placing back onto parchment. Return chocolate covered frozen bananas to the freezer.
- Let freeze to set for 15 minutes. Transfer to resealable container and keep in freezer until ready to enjoy!
