Your Mamma’s Green Beans Made Even Better!

Here is a delicious and fun way to upgrade your green beans for dinner! Roasted Green Beans with Pomelo are a welcomed addition to your dinner with a bit of sweet pomelo and toasted walnuts to top your dish. I love to blanch the green beans by boiling for a few minutes followed by an ice bath and then popping them in the oven to roast them for about 20 minutes or until they start to wrinkle.

Those greens beans will have a great texture and transform them into a special vegetable to serve with dinner! Top them with fresh elements like pomelo and some toasted walnuts.

Roasted and Wrinkled Green Beans

Pomelos are a new and exciting addition to our everyday lifestyle this winter! Pomelos are those huge grapefruits that look larger than normal but the inside is full of sweet pomelo! Similar to grapefruit without the sour element. These will be a favorite for those that have always wanted a little sweeter grapefruit! A bit more to peel, as I cut peel with a knife and take out the membrane in between each segment. It is a bit more of a labor of love but the payoff is definitely worth it! Enjoy this recipe for a twist on fresh produce!

Roasted Green Beans with Pomelo and Toasted Walnuts

Roasted Green Beans with Pomelo and Toasted Walnuts

Ingredients
  

  • 1 pound fresh green beans, trimmed 
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp sea salt
  • Freshly ground black pepper to taste
  • 3 cloves garlic, minced
  • 1 cup pomelo (grapefruit) segments
  • 1/2 cup walnuts, toasted

Instructions
 

  • Preheat oven to 400 degrees F. Prepare a bowl with an ice bath for the beans.
  • Rinse and trim green beans. Bring a 2-qt pot of water to a boil.
  • Place green beans in a boiling pot for 2 minutes until they turn bright green.  Once boiled for a few minutes, transfer beans to an ice bath for another few minutes to cool.
  • Spread blanched beans onto a parchment-lined baking sheet in one layer.  Drizzle with 2 tablespoons olive oil, season with sea salt, and gently toss.  
  • Roast in the preheated oven until beans are slightly shriveled for 20 to 25 minutes. Add minced garlic to green beans in the last 10 minutes of roasting.
  • Transfer roasted green beans to a serving plate.  Add the pomelo segments and toasted walnuts then season with a pinch of sea salt to taste.
