Carrot Top Walnut Pesto
2 cloves garlic
¼ cup raw walnuts
2 cups fresh carrot tops, stems removed
10 fresh basil leaves
3 tablespoons extra virgin olive oil
¼ cup grated parmesan cheese
Sea salt and fresh cracked pepper to taste
Combine each ingredient in the food processor until smooth consistency.
Serve with oven-roasted carrots, naan bread, or favorite crackers.
