Jackfruit Tacos
2 cans green jackfruit in water, drained, rinsed and chopped
2 tablespoons avocado oil
1 red onion diced
3-4 garlic cloves, minced
1 chipotle pepper in adobo sauce
1 tablespoon adobo sauce
½ cup water or veggie broth
1 teaspoon honey
1 lime, juiced
1 teaspoon cumin
1 teaspoon smoked paprika
½ teaspoon onion powder
1 tablespoon low sodium tamari
¼ teaspoon of sea salt
Heat the oil in a large skillet over medium-high heat. When hot, add the onions and garlic and sauté for about 5 minutes until the onions have softened and begun to brown. Add the chopped jackfruit, water, chipotle pepper, adobo sauce, honey, lime juice, cumin, paprika, onion powder, tamari, sea salt, and cover. Reduce heat and let it simmer until the jackfruit softens slightly for about 5 minutes.
Use a potato masher or forks and smash all the jackfruit up to get that shredded texture. Serve with favorite taco toppings.
