Cranberry Almond Date Balls on HLN’s Weekend Express

Chef Megan’s Healthy Holiday “Cranberry Almond Date Balls” with HLN’s Lynn Smith on Weekend Express

Cranberry Almond Date Balls with Cocoa Dusting

½ cup sliced raw almonds
1 cup pitted dates
¼ cup dried cranberries
2 tablespoons warm water
½ cup shredded unsweetened coconut
2 tablespoons chia seeds
2 tablespoons cocoa powder (optional)
1 teaspoon cinnamon (optional)

In food processor, grind sliced almonds into meal. Add pitted dates, dried cranberries and warm water. Pulse until blended. Add shredded coconut and chia seeds and pulse again until blended. Roll mixture into small-sized bites.

In small bowl, mix cocoa powder and cinnamon. Roll date balls in cocoa mixture to cover for additional option.
