Petite French Lentil Soup

Petite French Lentil Soup
2 tablespoons extra virgin olive oil
½ sweet onion, chopped
2 stalks celery, chopped
½ cup chopped carrots
4 cups vegetable or chicken stock
1 cup petite French green lentils, rinsed
4 sprigs fresh thyme
¼ teaspoon sea salt
Freshly ground black pepper to taste
Heat olive oil in large saucepan on medium heat. Add the onions, celery and carrots and cook for 5 minutes. Add vegetable stock, rinsed lentils, thyme and season with sea salt and black pepper. Cook for about 25 minutes until lentils are tender. Once lentils are cooked, place ½ of soup mixture in blender and puree. Add puree into remaining soup and stir. Heat to serve.
