Grilled Peach and Burrata Brushcetta

Grilled Peach and Burrata Bruschetta
4 fresh peaches, halved and pit removed
1 tablespoon avocado oil
1 tablespoon aged balsamic vinegar
Pinch of sea salt
1 fresh baguette, sliced thin
1 tablespoon extra virgin olive oil
1 ball of burrata cheese, torn or sliced
1 cup fresh arugula
¼ cup toasted pumpkin seeds or pine nuts
10 fresh basil leaves, chopped

Heat grill to medium high or 350 degrees. Place halved peaches flesh side up on platter. In small mixing bowl, whisk together oil, balsamic vinegar and sea salt. Brush peaches with mixture and place peaches on hot grill, turning once, for about 3-4 minutes each side. Remove from grill..

Brush baguette slices with olive oil and place on sheet pan. Bake in 350◦ oven for 8 minutes or until golden brown. Remove from oven and let cool.

To assemble bruschetta, add a few leaves of arugula on top of the toasted baguette slices. Add a slice or torn piece of burrata cheese then add a few grilled peach slices. Garnish with toasted pepitas, fresh basil and a light sprinkle of sea salt.

Even though Labor Day tells us of summer’s end on the calendar, we still have the feel of summertime here in the South.  I was delighted to keep on with peaches while we still have them.  This Grilled Peach and Burrata Bruschetta was the perfect ending to the calendar summer!  I love to make bruschetta with so many different options available from what is growing in the garden and from what is growing in the state!  The beautiful thing about this particular recipe is that it is reversible!  What does that mean?  It means that you can make a salad out of the very same ingredients and you can reverse the order of how they are assembled to make that salad.  Just amp up the arugula, drizzle some olive oil and vinegar on the greens with a little sprinkle of sea salt and top salad with grilled peaches, nuts or seeds and a burrata half.  You can use the baguette and make a little crunchy toast to pop on the side for your complete and gorgeous salad.  We can use all of the summers abundance until the last plate is clean as we watch the sun move in another direction for the upcoming Autumn season.  Cheers, MMM
