Megan is Founder and Chef of Healthy Eating 101, and she teaches Lunch & Learns focusing on health and wellness for employees. Megan also showcases national and regional food brands at trade shows by demonstrating the best ways to make them part of a healthy eating lifestyle. Great, so let’s dig a little deeper into the story – has it been an easy path overall and if not, what were the challenges you’ve had to overcome?
We would all love to have had an easy path along the way of this thing we call life but when we are met with challenges, it truly does make us stronger and more resilient to the inevitable obstacles.  We can certainly turn those obstacles into opportunities when we adopt and practice a mindset to meet those opportunities with grace and fortitude.   I struggled with my own body image many years ago and decided to meet that opportunity by diving in head first into the food industry as I was pursuing an acting career in comedy.  I was a vegetarian at the time and struggled to find foods that were supportive of my choice.  I found a “home” at the local health food store near my house in Chicago and learned about nutrition and how I could support this vegetarian lifestyle.  It was a great learning curve as I was trying to keep my body healthy and energy up while I was changing the foods I was eating.  I truly embraced this natural foods lifestyle despite the aroma of the grassy urban health food store.  It was my haven for learning and found myself advising people about what they could do to improve how they felt every day through what they were eating and their lifestyle.  I had always loved to make people laugh and decided to combine to the two things I felt most passionate about so I started teaching classes showing people how to transform their eating and food choices with real life stories that seemed to resonate with them. I then created my own cable access show called The Urban Herbal Show, about this healthy urban lifestyle and how to juice, blend and make healthier food choices with what is available at the natural foods store. Organic has come a long way baby.

People love to hold on to their resistance when it comes to changing their eating habits and their overall lifestyle.  More often than not, it may take a diagnosis or an unfortunate event to get someone to pay attention to their body and to take this body thing more seriously.  The life we are given is not a dress rehearsal!  We need to know the way to change our health and well-being and it starts with the food we put in our bodies, the thoughts we dance with in our minds and the love we experience through our spirit. We can find better results to feeling great in our everyday life by learning to cook and choosing healthier options. Learning to take control of our health through our food choices and mindfulness can certainly be better than any medication could almost ever fix.  At the end of the day, we all want to feel good and feel whole in our body and we should all know what that is like to live there!
